Title: Zesty Mixed Cucumber and Sour Cream Dip
Categories: Appetizer Dip
Yield: 1 1/2 cups

BURPEES EARLY SUMMER GARDEN
4 Pickling cucumbers, 4-5" long; peeled & finely diced
2smDill pickles, 3" long; finely diced
1/4cScallions; finely minced
1mdGarlic clove; peeled, mashed
1tbRed wine vinegar
1/2cSour cream
1/4cMayonnaise; preferably home- made
  Salt
  Black pepper

Combine all ingredients in a small bowl and mix well. Season with salt and pepper, cover, and let stand at room temp for 1-2 hrs. to develop flavor. Serve with an assortment of spring vegetables as a crudite.
